Giant Meatballs


For two. You can also make the full recipe.

This recipe makes either two or three meatballs. Some ingredients show a range of amounts to reflect this. Anyhow, in a medium bowl combine

  • 1 egg
  • 1 1/2 - 2 tbsp bread crumbs
  • 1/4 tsp salt
  • some pepper
  • dash of nutmeg

Mix in

  • 1/2 - 3/4 lb ground meat

Mix it all up then make 2 or 3 meatballs. You can make hamburgers instead at this point - squish the balls into a hamburger shape and then make a big thumb imprint in the middle or else they'll swell up into balls when you cook them. You can carry on with this recipe and cook the hamburgers as if they were meatballs but I find they're much better on the BBQ.

But if you're actually making the meatballs, then carry on with this recipe. In a frypan with a good lid heat up

  • 1 tbsp butter
  • 1 tbsp oil

Then fry the meatballs in it until well browned all over. Discard oil but leave brown bits. Return meatballs to frypan. Then add

  • 1 cup chicken stock * not concentrated *

And cook covered for

25 minutes at simmer.

Serve with mashed potatoes.
