Giant Meatballs


For two. You can also make the full recipe.

In a medium bowl combine
  • 1 egg
  • 1 1/2 TBSP bread crumbs
  • ¼ tsp salt
  • some pepper
  • dash of nutmeg

Mix in
  • ½ lb ground meat

Mix it all up then make 3 1/3 cup meatballs. In a frypan with a good lid heat up
  • 1 tbsp butter
  • 1 tbsp oil

Then fry the meatballs in it until well browned all over. Discard oil but leave brown bits. Return meatballs to frypan. Then add
  • 1 cup chicken stock or tomtato juice

And cook covered for

25 minutes at simmer.

If you used chicken stock, make it into a gravy and serve with mashed potatoes. If you used tomato juice, add a jar of spaghetti sauce and serve with pasta.
