Giant Meatballs


This recipe makes one pound of meatballs. You can also make a half pound batch.

In a medium bowl combine
  • 1 egg
  • 3 TBSP bread crumbs
  • ½ tsp salt
  • 1/8 tsp pepper ¼ is fine
  • 1/8 tsp nutmeg

Mix in
  • 1 pound ground meat

Mix it all up then make 6 ⅓ cup meatballs. In a frypan with a good lid heat up
  • 2 TBSP butter
  • 2 TBSP oil

Then fry the meatballs in it until well browned all over. Discard oil but leave brown bits. Return meatballs to frypan. Then add
  • 1 cup chicken stock or tomato juice

And cook covered for

25 minutes at simmer.

If you used chicken stock, make it into a gravy and serve with mashed potatoes. If you used tomato juice, add a jar of spaghetti sauce and serve with pasta.
